(1) Vacuum low temperature frying dehydration and drying principle:
Fruit and vegetable crisps are made of fresh fruits and vegetables as the main raw materials, edible vegetable oil as the hot medium, and vacuum low-temperature frying (VF vacuum Fryer) and other advanced technologies can quickly dehydrate and dry in a very short time to obtain fruits and vegetables with low water content. They have low oil content, crisp but not greasy. Raw materials → screening → cleaning → slicing (cutting) → green (color protection) → draining → freezing → thawing → soaking (vacuum impregnation) → cleaning → draining → vacuum frying → vacuum degreasing → seasoning → product packaging → warehousing.
