Potato raw material requirements:
(1) Reducing sugar, the content is 0.3%, and the maximum cannot be higher than 0.4%. If the reducing sugar is too high, it is necessary to increase the blanching time and shorten the frying time.
(2) Dry matter: above 19, the higher the value, the harder the French fries, and if it is lower than 19, the French fries will be soft. If it is lower than 19, it needs to be coated with powder to increase the dry matter
